Highbank Apple Cake with Coolattin Cheddar Cheese

Ingredients

  • 100g butter
  • 175g soft brown sugar
  • 2 eggs
  • 4 pink lady apples, peeled and grated
  • 100g oats
  • 125g plain flour
  • 2tsp cinnamon
  • 1/2tsp ground nutmeg
  • 1tsp baking powder
  • 1tsp baking soda
  • 4tbsp Highbank Apple treacle
  • 275g milk

To Serve:

  • Thick slice of Coolattin Cheddar Cheese and some toasted walnuts

Method

  1. Preheat the oven to 170°c/ gas mark 5.
  2. Line a 10 inch spring form tin with baking paper.
  3. Using a stand mixer or a hand mixer, whip the sugar and butter till lighter in colour and fluffy.
  4. Meanwhile in a separate bowl, mix all the dry ingredients.
  5. Once the butter and sugar are ready, add the eggs one at a time. Mix well.
  6. Add the grated apple and the Highbank apple treacle.
  7. Add half of the dry ingredients, mix slowly.
  8. Pour in half the milk, whisk gently into batter. Add the rest of the milk. Then the flour. Try not to over mix.
  9. Spoon cake batter into the tin.
  10. Bake for 35-40 minutes. Using a toothpick, poke a hole in the centre of the cake. If the toothpick comes out clean the cake is done.
  11. Allow cake to cool completely before removing from the tin.
  12. Slice into 12 portions and serve with Coolattin Cheddar and toasted walnuts.
