Highbank Apple Cake with Coolattin Cheddar Cheese

Ingredients
- 100g butter
- 175g soft brown sugar
- 2 eggs
- 4 pink lady apples, peeled and grated
- 100g oats
- 125g plain flour
- 2tsp cinnamon
- 1/2tsp ground nutmeg
- 1tsp baking powder
- 1tsp baking soda
- 4tbsp Highbank Apple treacle
- 275g milk
To Serve:
- Thick slice of Coolattin Cheddar Cheese and some toasted walnuts
Method
- Preheat the oven to 170°c/ gas mark 5.
- Line a 10 inch spring form tin with baking paper.
- Using a stand mixer or a hand mixer, whip the sugar and butter till lighter in colour and fluffy.
- Meanwhile in a separate bowl, mix all the dry ingredients.
- Once the butter and sugar are ready, add the eggs one at a time. Mix well.
- Add the grated apple and the Highbank apple treacle.
- Add half of the dry ingredients, mix slowly.
- Pour in half the milk, whisk gently into batter. Add the rest of the milk. Then the flour. Try not to over mix.
- Spoon cake batter into the tin.
- Bake for 35-40 minutes. Using a toothpick, poke a hole in the centre of the cake. If the toothpick comes out clean the cake is done.
- Allow cake to cool completely before removing from the tin.
- Slice into 12 portions and serve with Coolattin Cheddar and toasted walnuts.
