Irish Mammy Cook’s Apple And Custard Pancakes

Ingredients

  • 200gm self raising flour
  • 50gm custard powder or cornflour
  • 100gm caster sugar – optional
  • 1 tsp baking powder
  • 150gm very soft stewed apple – I cooked mine in a little water. Sweet or cooking apples work here – cook till almost a purée
  • 3 eggs
  • 1tbsp vanilla extract
  • 150ml milk
  • butter for cooking

To serve

  • Highbank Apple Syrup or Treacle, or lashings of good Irish butter.

Method

  1. Add flour, custard, sugar, baking powder and apple into a bowl and mix together well with a wooden spoon.
  2. Add the eggs, milk and vanilla extract – no need for a separate bowl – and mix until there are no lumps left.
  3. Add a little butter to a medium hot frying pan. Add some batter and cook until the top is bubbling. Then flip. They take less time on the other side. Notes I love these plain, but they are also great with golden syrup or honey.
