Irish Mammy Cook’s Apple And Custard Pancakes

Ingredients
- 200gm self raising flour
- 50gm custard powder or cornflour
- 100gm caster sugar – optional
- 1 tsp baking powder
- 150gm very soft stewed apple – I cooked mine in a little water. Sweet or cooking apples work here – cook till almost a purée
- 3 eggs
- 1tbsp vanilla extract
- 150ml milk
- butter for cooking
To serve
- Highbank Apple Syrup or Treacle, or lashings of good Irish butter.
Method
- Add flour, custard, sugar, baking powder and apple into a bowl and mix together well with a wooden spoon.
- Add the eggs, milk and vanilla extract – no need for a separate bowl – and mix until there are no lumps left.
- Add a little butter to a medium hot frying pan. Add some batter and cook until the top is bubbling. Then flip. They take less time on the other side. Notes I love these plain, but they are also great with golden syrup or honey.
