Nut Free Energy Balls

Ingredients
- 230g pitted dates – or 2 cups
- 125g mixed seeds – or 1 cup
- 75g oats – or 1 cup
- 40g desiccated coconut – or 1/2 cup (Plus 1/2 cup coconut to roll in)
- 2 tablespoons Cocoa powder
Method
Makes approx 20 balls
This is one of my most loved and shared no bake snack recipes! I make tons of these balls throughout the school year. Having a stash in the freezer to pop into the lunchbox for school is a life saver!
Step 1: To make the balls: Add the dates to a bowl and cover with boiling water to soften.
Step 2: Meanwhile blend the oats, seeds, coconut, cocoa powder
Drain the dates and add them to the blender.
Blend until it looks like a thick paste. If it looks dry and won’t roll, add a dash of water and blend again.
Step 3: Roll into balls – big or small- whichever you prefer.
Add the extra coconut to a wide bowl.
To help the coconut stick, wet your hands and roll the balls again then add to the coconut.
Step 3: Label a food bag and add the balls.
Storage: Store in zip lock bags. They will keep for a week in the fridge or 3 months in the freezer.
