Smithwick’s Pale Ale 4 Cheese Mac’N’Cheese

Ingredients
- 400g cooked Macaroni pasta
- 150ml Smithwick’s Pale Ale
- 100g cashel bleu cheese
- 80g grated mozzarella
- 80g cream cheese
- 100-150g grated Aged Parmesan
- 150g butter
- 150g flour
- 200ml cream
- 200-350ml milk
- 2 knorr chicken stock cubes
- Salt & white pepper to taste
- 2 small white onions diced fine
- 3tsp truffle oil
Method
Pre-heat your oven to 200C
In a heavy based pot add in the butter and melt on a medium to high heat
Once melted add in the onions & stock cubes and whisk to melt the stock cubes and soften the onions
Now add in the flour, turn the heat down, season well and mix well
Cook slowly for 10 minutes then whisk in the pale ale
Now add in the cream and half the milk and bring to the boil stirring constantly
Once it starts to thicken add in all the cheese except for the parmesan.
Keep adjusting the consistency of the sauce by adding milk bit by bit.
After it cooks out slowly for 20 minutes it’s ready for the pasta.
Fold in all the pasta and half the parmesan as well as all the truffle oil.
Mix well and spoon it into an oven ready casserole dish
Top with the remaining grated parmesan cheese and bake until golden and crisp. Approximately 12-18 minutes.
Serve with bit fat and juicy Sirloin Steaks, Pork or chicken.
