Roast Almond and Sage Leaf Salsa

Ingredients
- 50g un-skinned almonds
- 20g sage leaves ( c 30 leaves)
- 4 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon balsamic vinegar
- Salt and pepper
Method
This is a crisp and piquant salsa that I serve with grilled pork chops or piece of grilled beef. If serving with pork, a traditional apple sauce or my yellow apple sauce is a lovely addition to the flavours. With beef, I serve a salad of rocket leaves and a blob of mayonnaise.
Preheat oven to 180c
Place the almonds and sage leaves on an oven tray and place in the preheated oven to roast until the nuts are crisp and golden all the way through and the sage leaves are also crisp. This takes about 10 minutes in my oven. Remove from the oven and allow to cool completely.
Chop the leaves and nuts together until a gritty texture is achieved. Add the olive oil, lemon juice and balsamic vinegar and season with salt and pepper. Mix to emulsify the oil and vinegar. Taste and correct the seasoning .
